This recipe is from my fiancée’s family.

Spanish Beans Dish

Yield: 4 Servings

Prep Time: 10 minutes

Cook Time: 40 minutes

Ingredients

1 lb. of Spanish beans (typically found at a Farmer’s market or Spanish store)

4 russet potatoes, into quarters

8 oz. pancetta

1/2 tbsp sweet paprika

1/2 tbsp spicy paprika

How to Make It

  1. Boil a pot of water with salt and blanche the beans for a few minutes. Remove and set aside. Cook the potatoes in the same pot until soft enough to be pierced by a fork (approx. 30 minutes), peel the skin off, and set aside.
  2. Heat a pan over medium heat with olive oil, add pancetta, and cook until lightly browned. Add cooked potato quarters and blanched beans. Add paprika and cook until mixed. Serve immediately and enjoy.
