I try to add fish into my diet as much as possible, since it has many health benefits. Salmon is one of my favorites and adding delicious broccoli rabe as a side makes it a full meal.


Salmon & Broccoli Rabe with Cannellini Beans
Yield: 2 Servings
Prep Time: 10 minutes
Cook Time: 10 minutes
Ingredients
Salmon
3 tbsp vegetable oil
1 pound Atlantic Salmon
Ground black pepper and sea salt
Broccoli Rabe Beans
1 bunch broccoli rabe, chopped into 2 inch pieces
2 tbsp olive oil
5 cloves of garlic
1 can cannellini beans, drained and rinsed
Ground black pepper and sea salt
Red pepper flakes
How to Make It
- To cook salmon, first heat a skillet over medium-high heat with vegetable oil. If the salmon is very large, cut in half with butcher knife. Add salmon to pan, skin side on the bottom of the skillet. Cook for about 5 minutes, until salmon is mostly cooked through. Flip salmon and cook for an additional 2 minutes, until fully cooked. Set aside.
- While salmon is cooking, heat a pot with 6 cups of water. Add broccoli rabe and blanch for 3 minutes until wilted. Drain and set aside. Add olive oil to a skillet over medium-high. Add garlic until fragrant. Add blanched broccoli rabe and cannellini beans to skillet. Cook for 5 minutes until combined. Season with salt, pepper, and red pepper flakes to taste.
