Pesto Chicken, Fresh Mozzarella and Roasted Red Pepper Panini

Ingredients
4 slices of sourdough bread
1/2 cup pesto
4 oz fresh mozzarella, sliced
1 jar of roasted red peppers
1 cup of rotisserie chicken
How to Make It
- Assemble the sandwich by spreading pesto onto a slice of sourdough. Then, layer a few slices of fresh mozzarella, a few pieces of roasted red pepper, and a generous amount of rotisserie chicken onto the pesto. Add another piece of sourdough to complete the sandwich. Brush oil onto each side of the sandwich.
- Heat a skillet over medium heat and cook sandwich until browned, flipping halfway through.
