Roasted Veggie Hummus Wrap

Yield: 4 Servings

Prep Time: 5 minutes

Cook Time: 30 minutes

Ingredients

1 white onion

1 zucchini

2 hatch chiles

1 small eggplant

2 tbsp olive oil

Salt and pepper

1 lb of pre-marinated chicken (see Note 1)

1 pacakge lavash bread

1 container of hummus

Optional Toppings: kalamata olives, feta cheese, sliced cucumber and tomato, etc.

How to Make It

  1. Preheat the oven or grill to 450 degrees Fahrenheit.
  2. Cut onion, zucchini, and eggplant (or any other vegetables of your choosing) into smaller pieces to maximize cooking surface area. Toss vegetables in oil and sprinkle with salt and pepper.
  3. Grill or oven roast the onion, zucchini, hatch chiles, and eggplant until browned with some charring. While vegetables are cooking, grill or roast the chicken until internal temperature reaches 165 degrees Fahrenheit. Set aside.
  4. Assemble wraps by spreading a thin layer of hummus down on the lavash. Add approximately 1 cup of chicken and vegetables, and add any toppings of your choosing. Roll up wrap and enjoy.

Note 1: I like using Trader Joe’s pre-marinated chicken shawarma, but any chicken will work.
