To me, taquitos are the ultimate comfort food. They are cheesy, crispy, and delicious. This is the perfect recipe for a day you are feeling lazy and craving something amazing.


Chicken and Cheese Taquitos

Ingredients
2 cups rotisserie chicken
2 cups Mexican-blend shredded cheese
1 tsp paprika
1/2 tsp salt
20 corn tortillas
2 tbsp vegetable oil
Salsa, for serving
How to Make It
- Preheat oven to 400°F or Air-Fryer to 355°F.
- Cut rotisserie chicken into 0.5 inch chunks and place in medium bowl. Add shredded cheese, paprika, and salt. Mix until combined.
- Heat tortillas for 20 seconds in the microwave, wrapped in a wet paper towel. Once warm and slightly damp, add 3 tbsp of chicken-cheese mixture and roll up. Brush rolled taquitos with oil.
- Place taquitos on a baking sheet or place in the Air-Fryer basket. Cook in oven for 15 minutes or in Air-Fryer for 14 minutes. Flip halfway through and cook until crispy. Serve with salsa.
