Chicken and Cheese Taquitos

To me, taquitos are the ultimate comfort food. They are cheesy, crispy, and delicious. This is the perfect recipe for a day you are feeling lazy and craving something amazing.

Chicken and Cheese Taquitos

Yield: 4 Servings

Prep Time: 10 minutes

Cook Time: 15 minutes

Ingredients

2 cups rotisserie chicken

2 cups Mexican-blend shredded cheese

1 tsp paprika

1/2 tsp salt

20 corn tortillas

2 tbsp vegetable oil

Salsa, for serving

How to Make It

  1. Preheat oven to 400°F or Air-Fryer to 355°F.
  2. Cut rotisserie chicken into 0.5 inch chunks and place in medium bowl. Add shredded cheese, paprika, and salt. Mix until combined.
  3. Heat tortillas for 20 seconds in the microwave, wrapped in a wet paper towel. Once warm and slightly damp, add 3 tbsp of chicken-cheese mixture and roll up. Brush rolled taquitos with oil.
  4. Place taquitos on a baking sheet or place in the Air-Fryer basket. Cook in oven for 15 minutes or in Air-Fryer for 14 minutes. Flip halfway through and cook until crispy. Serve with salsa.
